At one restaurant in Paris, we had some served on a special plate. It was cone-shaped with a small warming candle in the middle. Once slightly warmed this way, the fat becomes even more melting, and the meat is just a little bit more intensely flavored. The fact that we were spending roughly $40 for the plateful after the exchange rate didn't even bother us once we tasted it.

I have no idea whether it's served this way in Spain.

What a wonderful idea! I'll have to suggest it to my husband for the ham I ordered for him. ( (unfortunately though, I'm not sure it will be as effective- we tried it last night and the cryovac-ed ham had a firmer texture than I had in Spain).

The 3 times I had it in Spain it was served just like my picture- simply very thin slices arranged on a white plate.

Does anyone own one of those tricked out ham holders that would be willing to let us borrow for the Field to Fork Dinner?

This thread is bringing back so many memories of Spain. My wife was an exchange student and lived with a family in Spain about 10 years ago and the family kept a leg in the kitchen at all times. She simply kept it on the counter with a towel over it and anytime you wanted jamon she would shave off a piece! It was fantastic!
