I know the OP is talking specifically about a chef, but to broaden the question....

What if a job candidate for a server position told you, "I'd love to have the job, but I can't start for [let's say 10 days, as an example] because I want to do the right thing and complete the two weeks I gave my previous establishment. Will that work?"

How do you handle that?

That's a good point. You've not invested anything except a promise of a job. If for some reason , they were to bail , then you'd be out a lot less than if you were to have trained the person and they were to ditch.

To clear a few things out. No I am not the Chef that quit. I know a few Chefs in town though and like most people, some are great and some are not so great. There are two sides to any story. I think it's immature to get on here and rant about some things, but it's a free country, so rant all you want. Clancy, I'm a Miss, not a Mr. ;)
Anyway. This is a touchy subject and I just believe that all sides to the story and facts should be brought to the table when there is more than one person involved. Two weeks notice is something I believe in, but it is America and we aren't bonded to our jobs.

Sometimes, you have to fire the boss.

It is a case by case situation. I have worked for angels but I've also worked for devils. The authoritarian structure of business means that owners/managers will often use their position of authority to demean, control and demoralize if they are ill-suited to their position. One of the most regrettable moments of my career was having to endure a boss speak about the "dumb broads" who worked for him. The economic pressure and abusive conditions create a incredible tension.

Yes, I believe in two weeks notice. I have also known restaurants experiencing downturns that will start giving your shifts to other employees once you put in notice.

The last person I watched get fired was over not putting semolina in the pasta. I was privy to the fact it was going to happen about the middle of the night and they let him work out his shift because they needed him for the night.

Lets not forget all the small business owners who fire their staff only to deny it to the unemployment office.

So, yes. Context matters and if you all you chefs don't agree that you should give two week notice to employees you are firing, then there certainly exists conditions when it is appropriate to fire your boss.

My bad Miss Key. I looked back at the thread and realized that I said "better duck Mr. Key". Swimming against the current is rough business and I guess I was just feeling the tone...I am sorry, (sulking away now...)
