Aww, you guys! Thanks for the props - first lab is tomorrow! So excited, so nervous. Last night I dreamed I was demonstrating how to break down a salmon and roaches came out of it when I cut it open. And there was a rat in the soup!

John says Sigmund Freud would kick me out of his office for being predictable. :lol:

glad to hear it Marsha, congratulations!
Teaching proper knife skills is the single most important duty that a culinary instructor can offer.

Hey, everyone - my first day of my first class went GREAT! 11 great, enthusiastic, cheerful, obedient, patient students, who fully embraced our being on this journey together made it a great, great day. I got a little misty-eyed when I was telling them goodbye - three of them came up to tell me how much they enjoyed class, and I heard another one calling his mom to tell her how great of a day, and a meal, we had.

Man...life is so GOOD right now! Thanks everyone for the congratulations and your support.

Congratulations Marsha!
I heard you saw some of the crew at Sullivan this morning.... Sorry I missed you! Enjoy your new position, you have certainly earned it.

On a side note, we were at Sullivan filming Secrets of Louisville Chefs and i noticed a bulletin for students... it was a recipe contest and the prize was Derby tickets. We had a good laugh about it- something along the lines of - Enjoy this Derby. As soon as you graduate and get a job in the Biz you can kiss any hopes of attending Derby GOODBYE!

Madi, I didn't know you were in the building! I was soooo busy with my class, but I did get to see Anthony and your sous when I went into the lab they were working in to borrow some equipment.

You are sooooo right about students enjoying this "last" Derby as cooks - LOL!
