I've talked with the founders of this company a few times, although I haven't tried the product. Ten restaurants may be a bold goal; they have one location open so far. They do have the backing of sports mogul Mark Cuban, though, and they are very good marketers.
When they first opened in New Orleans they were known as World's Healthiest Pizza. I figured they would run into problems with that.
