Madi, I never have any trouble finding it, but it's in the cake/flour aisle of most groceries, in a "pie filling" section along with the apple and cherry varieties - NOT in the canned vegetables.

Not sure if this is part of trouble in finding it, but last year the commercial pumpkin growers were hit hard by blight and one of worst pumpkin harvests in years.

Edit to add this link I found about Libby shortage of canned pumpkin
http://dinersjournal.blogs.nytimes.com/ ... -shortage/
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

I know this is sorta after the fact, but I made Reuben Dip.....I know, but, if you like Reubens, you just gotta try this stuff! I mixed about 2/3 cup mayo with 2/3 cup 1000 island, mixed 1/2 of that with 1 can saurkraut and the opther 1/2 with 3/4 # chopped corned beef (shaved to start). Spray a a 8x8 or other nice dish of the same aprroximate size, with oil. Layer the saurkraut, sprinkle with shredded swiss cheese, layer the corned beef and top with more cheese. Heat in 375 degree oven for about 30 min until bubbly and serve with crispy rye crostini! YUM!!!
