If it's past closing time, guests who ask what time you close will continue to sit for another hour regardless of the answer.

...keeping you (the server/bartender) there possibly more than an hour after you've been cut and then leaving you a crummy tip.

Reminds me of the days when a certain local politician and her husband used to come dine where I was chef at the time pretty much every other Thursday. The last plane in from D.C. would get in at about 9:30 but it was usually late and the drive from the airport was about 20 minutes and we closed at 10PM during the week. The owner would make us stay open to feed them.
That wasn't so bad. But unfortunately, they would have to linger over about 3 drinks a piece before ordering. :evil: That would normally be around 11:15 to 11:30PM over a full hour and a 1/2 after we had closed. Then preparing the meal and cleaning up usually meant that I would be getting out of there around 12:15AM. It never failed that they would almost always say" Hope we didn't keep you here too late" :twisted: :twisted: :twisted: Talk about caring about your constituency :roll:

1 - Customers want to sit at dirty tables. Given the opportunity most customers will walk past several empty and clean tables and head directly for the only table which hasn't been cleared.


I agree with everything except for this one. I think it's more a matter of people wanting a table in a particular location & that desire outweighs whether or not the table is dirty. I don't personally know anyone that enjoys sitting at a dirty table. I won't even sit down at a table until it's spotless.
