I take my knives to them about every 14 months or so to get them sharpened. Actually they hone and polish them too. I don't go more often because I'm always tempted to buy something when I'm there.
Buying good knives are an investment, but they will last you a lifetime with proper maintinence.
Taking your tools to Heimerdinger is the best way to keep them in tip top shape.

Alas, the sharpening deal is -only- if you have a receipt proving you bought the knives there, and you have to be a worker in an area restaurant, not just a foodie - this is straight from a worker there 30 mins. ago. They want $8 apiece, so I went down the street to Campbells where they've been restored before for $4 each/ready tomorrow.

Whoa! This isn't the case at all. Somebody was misinformed. Grrrr.... Did you tell them you were a Louisvillehotbytes.com member?

The deal is SUPPOSED to be: Bring a knife..any knife...mention your membership, 15% off. If you want to PM me, I can make sure they make things right.

Made it clear, told them about what I had read, that it said 15% for just mentioning the forum but no dice: the woman said what I wrote above as the rules to play by- as I said they are at Campbells where they've been done before, get them tomorrow. Nice looking store, but I doubt I'll miss it.

It was just an honest mistake on her part...she must've not been informed (I think I know who it was... and this is not a suprise). We had a few other LHB members show today (including a chef) who all took advantage of the discount. If you are interested in trying again, let me know and we can make it up to you :D

Our knives are in dire need of sharpening but we usually only take them there if we're going to be traveling. Hate being without them!

Yaay! Thanks a bunch.

For everyone that goes into the store, I would greatly appreciate any and all feedback you may have about your experience. Also interested in hearing those who go to the website to order. They're not perfect, but they're making a very real effort to improve all facets of the business.

(for those that didn't see the other thread, I've known the Heimerdingers for a couple of years and they have recently hired me to help boost sales... I'm a marketing guy... in case you were wondering)

I'm there. I always sharpen up for turkey day at my house. It helps to keep the relatives in line. Seriously, they've done a great job for me in the past. :) CD

I've always bought Henckels knives. The two recent purchases that hubby made are both Wusthoff. While all my knives are properly sharpened (I swear) the two brands feel different as they cut. Like the edge is somehow different. Am I nuts?

The more I learn about the knife world, the more I'm amazed at just how different each knife is. If you think the Wusthof's feel different, try the Globals! Totally different animal.

Just different manufacturing methods, different materials, different balance... I recommend "trying" them all out before deciding on one. People typically stick with one favorite name brand because it has the characteristics they are comfortable with.

It would take a long time. Friction is what does the deed, so to speak.

I wanted to say that I was the aforementioned chef and I took in about a third of my collection, including my beloved training knife- the Chinese vegetable cleaver. They all were returned to me, beautifully sharpened and honed, with no drags up the steel. With five generations of service to the community, this is definitely the place to go... especially with the cooking season coming up!

EDIT: I'm like Dan, I had to physically pull myself out of the store, like Jim Carrey in Me, Myself and Irene!

Nope, different alloy combinations and forging techniques. And I follow the Japanese belief that each blade has a soul of its own...
