As gross as it is, I saw it happen on many occasions when I worked in the restaurant. Anything was up for grabs, the crazy thing was we got 50%-75% off menu price, so you could get a steak dinner for less than $5, most sandwiches were $3 or less...but if the servers disappeared for a few minutes, chances were someone had a table with several half empty beer bottles and untouched food.
Not at all surprised it was at Mimi's...or that the manager kept putting you off... that has to be the worst restaurant I've ever been to. The one in Knoxville is great, but the service at the one here is beyond horrible. I contacted corporate and got a generic response of "thanks for your concern." But that's okay, I'm sure there are plenty of other places that would appreciate regular customers that spend $40-$50 per visit.
