Becky, I always buy unsalted butter because you never know what you'll be using it for. The one and only endorsement I've heard for salted butter is that Gordon Ramsay said it foams better for sauteeing savory foods. I think he might be right, but you can always salt it as it melts to achieve basically the same result.

And you can definitely sub cream for the Half-n-Half. I used 40% heavy cream often when I made it. Frankly, many dairy products are practically interchangeable, depending upon the fat level you'd like to use. Higher fat content dairy products produce richer results, but lower fat dairy products produce lower-calorie, lower-lactose, perfectly suitable substitutes. You can't substitute skim milk for heavy cream, but you can definitely sub whole milk for heavy cream - you get the picture.

Thanks for the explanation Marsha. Now i know about the butter, and i can use the salted when i am sauteing veggies and use the unsalted for baking.

I kind of thought that about the cream and half and half but i wanted to be very sure about it.

p.s. Do you realize that you are an asset on this forum Marsha? You give so much information, suggestions, and advice to everyone on a myriad of things. I know i certainly appreciate you.

OMG, it turned out FABULOUS! It is so scrumptious and delicious! I have never had something both so rich and so lemony, yum. It's definitely the last lemon cake recipe I'll ever need. Bravo, Marsha!

My frosting was just a wee looser than I would have liked by the time I frosted the cake, because it took FOREVER for my cream cheese to get to room temp and it was getting late, so my frosting didn't get a chance to go in the fridge before going on the cake. But it still worked fine and tastes awesome!

I really didn't think it was hard as long as you just follow Marsha's instructions. Seriously, the hardest thing is zesting and squeezing the juice out of 4 lemons. No biggie!

Also - if you put the cream cheese in the microwave for 30 second intervals until its not warm but no longer cold, that speeds up the process considerably. I should have put that in the recipe.

Okay, cool. I'll try that next time. I'm always scared of taking the chill off stuff in the microwave, because it can be so easy to overdo it. But yeah, cream cheese tends to take forever.
