We also got the pizza for testing. I took ours to Richard at work (he did not know when he signed up that the time limit was before he got off). I happened to show up when Robin and Mary did, so I got to see and smell their pie before mine came out. My first thought was that the pie needed to be cut in 6 pieces to be truely "foldable" I took our pie to R and we ate it at his job. It traveled well, not a huge grease glob on the bottom of the box. I have had NYC pizza and dripping with oil was not one of my favorite parts. We really enjoyed the blend of flavors, the balance of sauce and cheese was great. It looked like the slice had spices below the cheese layer and that added to a very nice taste. Yes, a wood oven would hae improved it, but unlike many, I do not like my crust chared - a nice bit of crisp from the wood oven, but not blackened. The basil was a nice touch. This may take some education for the Louisville casserole pizza crowd (don't get me wrong - I like Louisville style too!), but it I really enjoyed it.

Late to the party, I got to test drive one of these too. I admitted to Tony up front I'm not an expert on NY pies, so I didn't have much to compare it to. I loved the crust, the cheese blend is great, I liked the basil...but I was a little suprised at how little sauce was on it. After reading your comments I'm realizing that is the nature of the beast, but this chick usually orders xtra sauce on all pizzas...my question is, if I order xtra sauce on this bad boy will I get the NY style stink eye?

You probably wouldn't here in Louisville but if you did it in New York you certainly would! :roll: Whatever makes a pie high you like it is what you should order, traditionally goes so far.

I want to thank everyone for participating in the focus group for the Brooklyn Pizza. Here are some of the observations I received:

Mark Radell "Very close to New York pizza"

Melissa Shuster "Not much different then your regular pizza"

Mark Hahn "You hit the sauce right on, I dont know what Annmarie is talking about, this pizza is much better then Spinelli's"

AnnMarie "Spinellis has you beat"

Maria Gray "It is by far the best I have ever had outside of NYC"

85% also mentioned that it needed more sauce, which I agree.

Annemarie, in her email to me summed it up best "These Kentuckians will probably like it"

Annemarie I hope your right!

Also to Deb Hall, I apologize for any rudeness from the staff. Please send me your address (tonyboombozz@bellsouth.net) as I would like to by you dinner. We will start selling it tommorow at the Springhurst Location only. Yesterday was for people who signed up to be a taste tester.

Thank you Robin for your help with this. My family is so fortunate to live in such a great city, a great state.

Tony,

Just to be clear- they weren't rude at all- just uninformed. The way it was stated was that you didn't have all the ingredients- not that it wasn't available for sale until Monday. A simple apology and the latter statement would have fixed it completely - it was after all my misunderstanding in the first place.

Thanks for the offer, but dinner's not necessary- I just wanted to make sure nobody else made the same error reading the thread and ran over to Springhurst to order. Glad to hear you have a hit! We'll be in soon.

Tony, I went to your Taphouse for an early dinner last night. Great service and pizza, love the TV's and beer selection as well. When will the Taphouse have the NY style pizza?

So its official. The Brooklyn Pizza Pie is available at the Springhurst location. The pizza consists of a 17 inch pie stretched thin with our NY Signature sauce and topped with a blend of Shredded Mozzarella and Grated Romano Cheese, then drizzled with Extra Virgin Olive oil and topped with fresh basil. Cut into large foldable slices.

Slices and Slice Combos are available for lunch. Prices start at $2.79 for a Cheese Slice and 4.99 for a Big Slice Combo which includes Field Green or Caesar salad.

Thanks for the thumbs up Annemarie. I appreciate everyone's input.

Mike and I read about the NY/Brooklyn pizza at Boombozz while we were out of town and decided on the flight back Tuesday night that we were heading to Springhurst for lunch on Wednesday. We were not disappointed!!! The Brooklyn style was spot on to our favorite pizzeria back home - the perfect ratio of cheese to sauce and the crust was nearly perfect. Mike could not help but laugh at the perfect trail of orange oil dripping down my wrist from my folded in half slice of happiness. We both agreed that this was a great pizza with stand alone flavor - no topping needed on this baby.

Thank you Tony! Now you need to get this on the menu at J-Town so we don't have to battle Hurstbourne to get a fix!!
