Dean is a great ambassador, but dang! I wish he hadn't demonstrated "Louisville Cookery" with Henry Bain Sauce ... blend two bottles of ketchup and a bunch of A1 sauce and stuff. What must the rest of the world think of us? :oops:

As Chef Deans first sous chef at equus, I hope he mentioned the mandatory pickled walnuts and chuntney along with A-1 and ketchup, etc.. But I'm sure he did us proud. hope to see the video soon. Bill

Oh, I agree, Susi. Henry Bain sauce is da bomb. Still, when Louisville is being paraded before the world, I'm not sure what kind of a message it sends out to see one of our top chefs pounding two bottles of Heinz 57's finest into a Cuisinart ... :P

Robin,
I did not have a choice what I cooked...of course I would have preferred to offer something other than the Henry Bain, That was the show's request and that is what I provided in the manner that they requested, end of story unfortunately, great experience and as always so proud of Ky. Chef's, Restaurants and local Cuisine.
Thanks to all for your kind comments, I have great memories of Chef Bill Smith, we were quite a team back in 85!

Great job Dean! I just wish they'd given you a little more time instead of rushing you so much. You barely had time to explain what you had made to say nothing about having time to explain how to make it.

I thought Chef Deano did great!!! It's hard to work with their hard pressure, 'move-along' manipulation, and I know few chefs who could've handled it so well. Seriously. Great job, and made us proud!!
