Apologies to all the baseball fans, but during the three years that I lived there, I never once toured the HOF :shock:

I did make it down the road to the Soccer Hall of Fame in Oneonta and to the Glass Museum in Corning, though. I also got to see Willie Nelson and Bob Dylan play at Doubleday Field!

Ya know...I'm scrolling down and I get to Marsha's post listing the ingredients in her Chicken Salad. I read "grapes" and think "eeeewwwwwwwww". So I'm with ya there AnneMarie...love (!!!) Chicken Salad...hate grapes in it. No offense to Marsha.

No big deal. There are only two HOFs that really matter anyway...The Rock and Roll Hall of Fame and the Pro Football HOF....IMHO of course

Who has the best chicken salad...? I do and I will gladly make a batch for all of y'all when we get to move to Louisville. Served with fresh fruit and rustic home made bread. Mmmmm.

Ohhh say I am liking the sound of that. First I have to sell the house and move closer to you guys. I hate to make it sound like I might be chickening out but we would have to get there, But I like it.

Oh, I totally second this - I can never get out of Lotsa Pasta without buying a pound of their chicken salad. I'm not a nut person, but I really like the crunchiness the slivered almonds give it and the sweetness that the pineapple slivers ('cause they're not chunks) provide. Then there's the "dressing" that brings it all together with its curryness. Yum!!!

WTF, so now I have a craving for chicken salad and have to go and try all these different best of chx salad. I guess that's what makes this forum so great.

I have not heard Ermin's listed though which, while I have not tried all those listed, is the best that I know of. I am not a fan of the sweet or grape varieties and this is a more savory option. Not sure about grapes in the chx salad being a KY thing but I know they are in my family's recipe, still not my favorite.

After reading all of these comments I have to make some just for me. I make a what I call "Turkey Salad for a Mob". After simmering a breast an cooling it overnight in the seasoned water, I add nuts, celery, mayo kicked up with Derkees Famous Sauce (mustard like), & lemon juice. The turkey is coming out of the freezer now!!

The chicken salad sandwich at Wild Eggs is very good. They serve it with cheddar cheese, which I was initially a little skeptical of, but ended up loving. It's definitely worth a try.

Adelia's in Frankfort has some of the best chicken salad I have ever had in my life. I don't know what they do to make it so tasty, it just is. If you ever find yourself in Frankfort for the day, you've got to check them out. Everything they have is really good. Delicious desserts too.

I'm not hear to toot my own horn, but when I make chicken salad at home, it usually gets eaten pretty quickly!

I will cook a couple of extra chicken breasts when grilling just to make it.
I like to kind of shred grilled chicken then add diced celery, red pepper, red onion, pecans, green onion, Durkee's Sauce and ranch dressing. As R. R. would say "Yummo!"

Dan,

Why don't you serve your recipe at the club?

I actually had the chicken salad sandwich and homemade chips from the club today. I like the CS very much but I think your recipe would be better.

I run into this a lot...Why don't we put certain things on the menu...It is very hard to please everyone all of the time. So most of the time when crafting a recipe or a menu, I have to shoot for the middle of the road. The status quo is the norm, especially in the atmosphere of the country club. Most of the people who eat here often are the older members, who are mostly resistant to change. There are some things you can't change with out alienating the membership and the chicken salad recipe is one of them.

When I took over the chef position, I had very difficult first three months because I was "perceived" of changing recipes and using different products when actually, I had done neither.

Thank you for the kind words...I may run different versions of chicken salad this summer as specials!
