Ryane, I noticed you started a separate pierogi thread while I was out, but just to keep this thread complete, probably not. Louisville was heavily settled during the 1800s by a lot of Catholic Germans and Irish and a smaller group of Italians, but for some reason, Polish and other Slavic immigrants weren't a factor here, so we got brats and kraut and chili with spaghetti in it, but no pierogies.

Ya' know, I used to work with a guy from Cincinnati and he gave me the impression that chili with spaghetti was from that part of the world. Maybe that's how it ended up in Louisville?

One thing I really like about Louisville food is how it seems to have been influenced from all directions. Every time you turn around it's different, and that keeps it interesting and fun.

Not to change the subject from fish frys or anything, as they are one of the things I miss about the midwest.

Perhaps the reverse, Steve. Cincinnati's special brand of chili came about when Greek and Bulgarian immigrants ended up in Cincy after WWII. First they opened restaurants of their own cuisine, but folks of the '50s weren't buying. So they reinvented Greek spaghetti sauce as "chili" and took it to the bank.

It's pretty certain that eating regular chili over spaghetti - much like Italian-Americans and their "gravy" - was going on in the Ohio Valley much earlier than that, so my guess is that the Cincinnati Greeks took the existing regional "chili con carne" and added their more exotic blend of spices to it. The rest is five-way history.
