At the risk of morphing this into a dating column (which I'm sure you DON'T want), I think the first date should focus more on the two of you getting to know one another in an informal, low-key atmosphere, rather than attempting to make it "unique"....I agree w/some of the other posters, in that as much as you may like this woman, you can try TOO hard to make a good first impression, then comes the pressure of how do you exceed subsequent dates....
....personally, I'd make it less of a date and more of two friends going out together for an evening...pick a local "neighborhood" place where both of you are comfortable and can enjoy the food...if it "clicks" between you, then you'll know soon enough.
