I dropped by the other day and got the list. There are some really cool meats on there, but of course they come in case size. So the question is, does anybody want to purchase part of a case of wild game meat? They have meats like ostrich, kangaroo, boar, antelope, elk, gator, frog, etc.

Email me at amanda [at] kybisonco.com and I will send you a list of the game / exotic meat that we get from the North American Bison Cooperative. I also have cooking tips and any information you may need to know about the meat. Stop in at KY Bison Co. - 603 East Main Street. I have a big binder full of info that I just had Vance show me.

Place an order, it will be on your doorstep in 2 days.

The only thing is that we have to order it by the case size, so perhaps you all may want to go in on something together and pick it up at the store to split it up?

Have you thought about doing "exotic" cuts from beef, like the heart or the tongue? Hearts are great marinated and grilled, Argentine style; the tongue makes perfect mincemeat if you're thinking ahead toward holiday time . . .

My mother used to prepare Frituras De Cesos (Calf-Brain Fritters).

I've been trying to find a solid resource for some of these "exotic" parts often overlooked as lesser cuts.

Seems that back in the 70's and early 80's, tongue, tripe, brains... Could all be purchased at your local Krogers.

Pig's trotters are about as exotic as most butcher shops will get in this city.

I guess that these parts are now ending up as mass-produced wieners and generic cold cuts.
