Could you top that Guac with some Duck Confit or duck ham? Pleeeeeaasse?

Yum, yum, yum, yum! and the Cajeta should be illegal!

Thanks again Fernando and Christina. xoxoxo

Michael and Fernando unleashed a couple of new items on Steven Ton and I the day before the change over. (or maybe it was the day after, not sure) It was truly an amazing lunch. Great to see two gastronomes occupying the same space. Best of luck guys.... keep tweaking, and perfecting - you are an asset to the Louisville dining scene.

I would like to include myself to the return of the guac list. It was my favorite thing on the menu.

Had dinner at Mojito's tonight and just about everything was new and wonderful. From the chef's cheese selection, to goat cheese stuffed peppers. The new ravioli was simply amazing as the the flat bread topped with duck confit. We had too many things to go into much detail but there were not any misses - the new menu is firing on all cylinders. Can't wait to try the Duck Ham. Keep it coming!

Fernando,

As a half-Spaniard (mom's from Zaragoza, Spain), your restaurant is my favorite in the city. I'm glad to hear that your menu is now even more authentic to Spanish cuisine. I've been to your restaurant a half dozen times now, and plan to go back tonight with my wife for our 10th anniversary.

We moved here several years ago, and I never thought I would find such a great source for Tapas and Paella...in Kentucky no less! Keep up the great work.

Thank you so much guys, this is good news and I'm passing along the complements to our staff. I wish I could take all the credit but Michael is been I big influence in our new menu, he was the missing link for Mojito we both have the same passion for cooking and food. Ralf please if you see this message, please say hello tonigh whe you come in. Happy aniversary. Spanish food is always been a passion of mine, my grand parents they all came from spain to Cuba. From one side of my family martinez-Valdez from Galicia from the other side Figue-finale from cataluna that's why I love it so much and I'm glad you like what we do. Fernando

I have to start this reply saying the wife and I love mojitos. However we were very sad last time we went with the new menu as most of the things we had to have are no longer on the menu. I absolutely loved the chicken milanesa, the wife loved the pork tacos, the sweet chili sauce with the calamari, and the tres leches cake and all those things are now gone :( .Also another beef I have is the menu is extremely cluttered and small print. I was very confused. I settled on the lomito and I did enjoy it very much but I really miss my milanesa and the pork tacos. Please Fernando bring them back :). Also really enjoyed the huge steak fries.

Guacamole is also not Spanish Tapas.
The Tres Leches cake was not made in house, and it was decided to take it off the menu.

In Fernando's defense, (which it seems he could use), it seems to me that as a Chef with any level of passion and skill, would like to use his talents to bring menu items to Louisville that you cannot get in too many places around town.
First of all, the guy has his own farm, he utilizes the goods of other farmers, and local purveyors throughout Kentucky/Indiana. He continually strives to show his passion through his food which is not always easy.
He is a chef that you can trust, I do. Not to mention, he and his wife are two of the nicest people on the Planet!

If you like Pork tacos, try the duck confit flatbread... you will not be dissapointed.
Fernando makes his own ice cream, which is delicioso! Try it.

People, we are lucky to have Fernando as a Chef/restaurateur in Louisville, and if the folks on this forum
consider themselves "foodies" then the talented chefs at Mojito and their offerings should be easy to spot!

I have no ill will at all towards Fernando as I know he has extreme passion which is good. I just stated I missed several items and I also paid compliments on the lomito and the steak fries. Fernando you are an asset to the community.
