We do love Simply Thai, and eat there 2-3 times/month at least. At the same time, I wish there were Thai places in Louisville with broader menus.

We've been to Cleveland a lot lately, and even in the far burbs there are WONDERFUL Thai places that put Simply Thai to shame - broader menus, more interesting options, a dozen "daily specials" that are primarily fresh fish, more complex flavors. (I'm speaking of Peppermint Thai and Lemon Grass for those familiar with Eastern suburbs)

There are interesting curries (haven't seen Chou Chee Curry in Louisville, tho it may be at other restaurants, and also not seen mango, string bean, or pik king curries), and instead of picking a curry and choosing between Tofu, TVP, chicken, beef, and shrimp, they all add additional options (like duck, scallops, squid, seafood, pork, specific fish specials).

Again, nothing against Simply Thai, but now that we are familiar with and love Thai food we'd like them to take the next step, and maybe with more "specials" (they have some) broaden the options.

Yeah, I hear that. I've been to Thai places in Washington State and in Hawaii that made my heart sing. Since you're regulars, Andrew, you might get in a habit of suggesting this every time you're in. Perhaps if enough of us do, they might start putting on more memorable specials - and promoting them. I'd be happy to have them (or a friend) post the specials here.

Word, although I actually had in mind Bai Tong (originally Orchid) out by Sea-Tac, which was started for Thai Air crews on overnighters, then opened to the public. Aaaaahhhhhh ... I want to be there NOW! (Mary and I were also married there*, so it's kind of a sentimental journey as well.)

The shrimp and coconut rice is amazing...though I confess I choose spice level 0 (no, that's not a typo)!
