I actually just had my last bit of turkey making this last night, enjoy. =)

Firstly, the turkey I fix for Thanksgiving is slow-smoked with hickory and applewood, I believe any turkey would do the job just fine though.

Slightly sear a large bun, insides only of course, after which apply a very small amount of butter and spread, allowing to melt into bun, set aside. Warm turkey slices in microwave for about 20 seconds, just enough to get warm but not hot. While the turkey is in the nuker, apply mayo to each side of the open bun and apply a pinch of table salt to each side as well. Add one slice of tomato, sliced very thin, two slices of very dill pickle, and if desired one very green leaf of lettuce over the turkey. Close all this inside the two bun halves and enjoy.

I haven't tried many other of the sandwiches listed here, but this has always been my "leftover turkey meal."

i hate to say it but the Turkey Sandwich at Wolfgang Puck Express downtown is by the far the best I have had in town
