I do however have the experience of having owned a gourmet food store and gourmet- to- go across the street from Jasmine. We found from experience that that area a) was less inclined to go for innovative food than for standard fare and b) was consider "really far out there" and off the beaten track for much of the rest of Louisville ( which amazes me as I'll drive ANYWHERE for good food and it's 3 minutes from the Snyder) As a past owner, I'm well aware of the volume of traffic needed to support the very small margins you make at a restaurant. As I said, I think the Dim Sum concept could work, but not the far less familiar breakfast they are considering.

True, although there's a little bakery out on South Side Drive near Iroquois Park that does have a lot of the familiar treats - moon cakes and such.
