This is the first and probably our last year raising turkeys. We called to process 10 birds in Sept and was told that we could bring them in on Oct 18 or Nov 1. All other dates leading up to Thanksgiving were full. Given that we were not going to keep "fresh" birds for a month, we choose to have them frozen.
