Jeff you are absolutely correct. Commercial coffee brewers can only reach the temperature of about 205 F, so the water in the brewer will not boil (unless the thermostat fails). Then it's a service call. We were swamped by calls from our downtown customers and we informed them that neither the coffee brewer nor tea brewer would achieve the proper boiling temperature.

The only exception would be locations that used a pourover brewer or had a pourover option on their automatic brewer. Then they could use it with bottled water. It's not a good morning without that coffee fix.
