Yup, just look at the number of obese people as you stroll around town. Since moving to this area 18 months ago, I am continually "impressed" by the number of fat people here.

Oh my....we were in Stilwell, Oklahoma for some time . What an interesting demographic.

If you're referring to SOS I think that dish is actually creamed, chipped, dried beef on toast and not biscuits and gravy. Very different things. Unless biscuits and gravy have (has?) a nickname I'm not familiar with.

Interesting demographic ? God I wish I had your way with words. :? I would have probably said something like "I would rather have someone drive a red hot railroad spike up my butt with a ball peen hammer than to live in that place again". :P Seriously though, I didn't detect any permanent emotional scars when we met, so either you've got a good doctor or you didn't stay there -too- long. :P

One of my customers, Bud from Eminence Bar and Grill in Eminence, stated that he had the recipe (purchased) and was to use it there. Haven't been by to try them, or if they are still on the menu, but one can hope they still exist, somewhere, out there, under the same moon...

As for OKC, well, with Mr. Spriggs BBQ what does one expect...

Haven't been to "Spriggs" (it was in a part of town I tried to avoid) or Van's but I will give those Okies credit for one thing...They DO know BBQ. We judged a few large BBQ contests while we lived there and even the "bad" stuff was better than the "good" stuff I've tried other places.

That being said, it was their penchant for crap like "Rocky Mountain Oysters" and "Calf Fries" (look 'em up) that really sticks in my mind (and gives me the heeby-jeebies).

I would be willing to keep a local tradition local. If anyone has or finds the mazzoni recipe I wouldn't change it a bit. I don't eat oysters myself but that doesn't mean that I can't cook them. I worked at The Coach House in Lexington for a couple of years. Ran the sautee station and made fresh fish specials all the time with fish I didn't particularly like so I just had other people taste them and provide feedback.

I never ate at Mazzonis but I know where it was and I knew they had been a lifelong business here. I love my hometown and wouldn't have a problem at all keeping a tradition alive.

If anyone knows about this recipe, has worked there, etc... let me know and I will keep it alive 8)
