I'm just throwing this out there without my full personal endorsement.

Fiesta Mexicana on B.Town Road has a Bluegrass band of all things on the weekends.
My husband loves the place. Me...not so much but I'm a purist when it comes to the food of my homeland. (far...far West Texas)

Cold beer. Good salsa, beans and rice.

Another vote for El Toro. We live in the Highlands but HAVE to drive out there.

Only complaint: The margaritas (usually two-for-one, served at the same time) are pretty weak.
