From a purely nutritious point of view, all of the nutrients are boiled out of the meat into the liquid. Regardless of the end effect, taste wise, they are not much more than empty calories after boiling. At least let Stephen concoct a tasty alcoholic beverage out of the rib juice so you get your nutrition!!! LOL!

Ya'll can enjoy ribs any way you want...boiled, baked, grilled, fricasseed, pan fried, or raw...it's all personal taste and/or what you know. But the simple application of a sauce at the end of any of these cooking processes does not mean you've made and/or are eating "BBQ".

Try par-boiling using Zataran's Crab & Shrimp Boil. I've been doing this for a long time.

This reminds me a lot of all the beer conversations had on this site in the past.

What I'm getting out of the discussions - boiling ribs is the equivalent to drinking Bud Light, smoking ribs is the equivalent to drinking craft beer.

Well now did you have to go and turn this into a religious discussion?

As the beneficiary of the said ribs in the original post, I have to say they were wonderful. The meat was tender, yet not falling off the bones. Taste-wise there was the hint of the garlic that made a great complement to the sauce. Yes, the sauce.

As my lovely bride said, we've had meat from a smoker that was just as satisfying gastronomically. It's just a different way of cooking. If you are fortunate to have a smoker at home, FSM bless you.

Oh, and I had to do a double take when I saw the comment about how boiling ribs reduce the nutrients of the meat. If your diet depends on ribs for nutrients you've got bigger problems than how they're cooked. ;)

Steve, don't even get me started on this "falling off the bone" stuff.

I'm sitting back drinking a Bud Light right now and after 3 hours in the hot sun, it tastes pretty damn good. By the same token, I've had some parboiled ribs that were very good...just isn't true "BBQ".

I don't have a smoker, but have tried several different "suggested/recomended" ways of grilling my ribs. I have to say, the one I stuck with and have been using for years has garnered me the respect of many smokers, par-boilers, etc. I know you say it's the same as boiling, but it's not - I use a dry rub, then wrap in foil and put on the (charcoal) grill for at least 2 hours. Remove from foil, brush on the sauce and sear. Mouth watering, tender, finger-lickin' ribs! :P

Oh, and as for the "boiling out" the nutrients - I don't know about that, but IMO par-boiling boils out a lot of the meat's flavor...

I'd like to think I had a small part in that effort... 8) After getting totally rained on, I thought those ribs and butt turned out pretty darn good....

Darn right you can Dano. 2 days of 94+ degree heat, 3 inches of rain and 36 hour of no sleep...if anyone would have hung with us that weekend they woulda been hanging with the BIG dawgs. BTW, we beat "Lotta Bull" and a few other people who have graced the Food Network, etc....and <eh-hem> just sayin...but unlike a lot of folks the homies didn't have any fancy 400K air conditioned motor home to crawl into to escape the heat that weekend.
