Grilled Cheese and Avocado Sandwiches at Ray's

Ok, maybe not that exciting for all the foodies. But in our little neck of the woods (Bonnycastle and Bardstown Rd), there aren't all that many veggie options for folks. 360 is right there, and Cumberland opens late in the day, but otherwise you're walking to Q or Penn station or something.

So we no have nice hot Grilled Cheese and Avocado Sandwiches, made to order, with tomato and a touch of pepper. They're priced at only $3.99. We''ve only had them a few days, but they have been a big hit so far. Organic bread, of course!

Any suggestions for other good hot veg sandwiches? We do have vegan cheese also, because we always try to do a vegan option for anything on our menu. With our soup, and now our hot sandwiches, we're starting to feel a little like a restaurant! (but don't worry, we're still a coffeshop)...

Haven’t been out to see you, but I’ll definitely be by for coffee and some of that grilled cheese.

My taste runs for veg over meat any day, and ideas are running through my head - just not sure what’s appropriate for your equipment or space. Would pan-frying or oven roasting ingredients be do-able?

I have to ask. What is vegan cheese? I thought that a cow had to be in the mix somewhere to make cheese.

Some sort of hummus sandwich would be good and easy to prepare. Perhaps topped with spinach?

I haven't been to Ray's in a while so I don't know you already do this or not, but it would be awesome if there were some bagels available, especially some sort of bagel sandwiches. Of course, most of the bagels I've had in the Louisville area are pretty terrible and not anything like real bagels, so maybe you'd have to make your own? Dunno, but that could be a possibility.

Joel - last time I was there there were bagels. I had a very tasty everything bagel. I like the idea of bagel sandwiches though.

Bagel sandwiches are a pretty good lunch option, plenty of places in my old Brooklyn stomping grounds had vegetarian and non-veg options. This one coffeeshop, the Read (on Bedford Ave.), had a great bagel and hummus plate that I kinda miss.

Nimbus, where do you source your bagels from? Just curious, my standards are kinda high. :wink:

Definitely have had (and loved) H&H bagels. Most New Yorkers I know consider theirs to be the best! Would be amazed to get them in Louisville, what's this place on Shelbyville you're talking 'bout?

Jeez, that's way out past Hurstbourne. That's the same company that's moving into the old Brownsboro Inn location, though, so that's not quite as bad a drive.

But hey it's not like a nice gourmet grocery store is needed in DOWNTOWN or anything.

(sorry for the rant, I just don't understand why Louisville can't get it together to put decent retail in its geographic center.)

Those are great bagels. On our last trip to NY we stopped there before our flight out and brought home a couple dozen to throw in the freezer. While it's not quite the same as fresh, the hold up pretty well for a few weeks. I think our cabbie to the airport thought we were crazy. Of course, it probably had more to do with the smell of all the cheeses we were bringing back from Murray's than the huge bags of bagels.

While Louisville has a bunch of great food purveyors, I don't think there is anyone that can really compare to NY on the bagel or cheese front.
