Cooking at the Cottage: BBQ 101-The Art of Low and Slow BBQ

by Steve P » Tue Jun 14, 2011 1:45 pm

This from the Cooking at the Cottage website:

Wednesday, July 27th
● Steve Pearson – Rolling Bones BBQ Team ● “BBQ 101 – The Art of Low and Slow BBQ” ● $45.00 ● 6:30 – 9:00 pm ● Partial Hands On Class! Learn how you can create awesome smoked meats, customized sauces and delicious sides from a pro. You will learn basic BBQ techniques, discuss various equipment, smoking woods, popular meats, sauces/rubs and seasonings and how to put it all together. Menu: Pulled Pork Sliders ● Ribs ● Sliced Brisket ● Homemade Coleslaw –Two Ways (traditional and Caribbean style) ● Stevie’s “Kicked Up” Baked Beans ● Surprise Dessert

Looks like it's "official" now...So I'll go ahead and post this. Hope some of ya'll will join us for this one, Becky and I are going to do our best to make it a really good time.

P.S. PLEASE...and I'm being serious...No FOTB or "Amateur Expert" jokes/replies...I've come to the (late) realization that these kind of comments are hurtful to a few people...and I'm trying to mend a few fences. Thanks.

Quite cool, Steve.

Great of you to share your knowledge, experience, and opinions.

What about learning how to drink a 12 pack of Two-Hearted Ale while watching the smoker work?

Very interested in this, will try to attend if schedule permits. Actually Steve I have some brisket and ribs I'd love for you to try sometime. I've been working with a rather "new" technique that seems to be providing a great texture that's not FOTB and would love your opinion.

Fences? We don't need any stinking fences.

  ...Thank you for that vote of confidence Dan. For those that don't know the story, Dan cooked his first BBQ contest as an honorary member of The Rolling Bones last year. To break him in we ordered up 2 days of 97 degree heat, 36 hours without sleep and threw in a 4am severe T-storm that dumped four inches of rain on our little heads (literally). We were train wrecks by the end of the contest but please note...He's back for more this weekend at Jeffersonville. :D

Ryan, yes...please do come. I'm in the process of developing the "lesson plan" and while the intent is to gear the recipes and material toward the less experienced pit masters (thus the name BBQ 101) there will be a little something for people at all levels of skill and interest.

Good old Dan must be pretty tough if he put up with that and is still coming back this year! Hopefully the weather will be a lot better this year.
