Recommendation for Great Cake

by Jenny H » Thu Jan 06, 2011 3:04 pm

I have a friend looking for a great, moist cake. She just moved from Virginia and can't find a bakery that makes a cake she likes yet. She is looking for a vanilla that is really moist. She said it may even be a sort of light pound cake if that makes sense. I know she has tried Gigi's for the cupcakes and thought they were dry. I know there are several to choose from but I don't usually get cake for dessert so I can't recommend anything. Thanks for the help!

Try Cake Flour. They do fine work and can probably do some custom work to suit your friend's specific needs. Ask for Claudia.

Personally, I'd try Andrea Mancini Essenpreis at Q&A Sweet Treats in LaGrange. http://qasweettreats.com/

There is also Sweet Surrender. The pound cakes are pretty good and they sell cakes by the slice so she can sample before she buys a whole cake.

Marsha Lynch makes AMAZING cakes! Super moist.

The lemon curd filled, lemon cream cheese frosted, lemon cake she made for Ainsley's baby shower last year was probably the best I've ever had.

Needless to say I like lemon.

I am in total agreement about Marsha's cakes. She has made several for me, but I thought that Sullivan had her pretty well tied up and that she wasn't making cakes at the moment.

That said, I have also had Andrea make me several cakes (and scones) and she willingly adjusts flavors to suit her customer. I thought in the original post the friend was looking for a very moist vanilla cake. I know that Andrea will adjust her recipe to her clients liking. For example, she has made ham and gruyere scones for me (I prefer the savory to the sweet) and she has made strawberry scones for me with less sugar.

You ladies are so sweet. Yes, it's true I'm not making specialty cakes right now...but I sure do miss it. I'm sure I'll get back to it some day.

In the meantime, Andrea or Leah will fit the bill nicely, no doubt about it. I know Claudia at Cake Flour has mad skills but her talents lie towards the vegan baking end of the scale, if I'm not mistaken.

Anyway, I think we need a cake-off some time soon to keep me in practice. Blind tasting cake-off, ladies?

Yes, I can attest to Marsha's cake skills. I used to go to Cafe LouLou just for her Lemon Sunshine Cake. She even made me one for my birthday. She even was gracious enough to post the recipe in the paper one time. Any other recipes you are willing to share? :) Like for a great vanilla cake? Is that recipe still on the C-J website? So yummy!

Thanks for the kind words, Gayle and Marsha! I would LOVE to have a Cake-Off. I started off by making cakes, it's pretty much all I did when I first developed a love of baking. Although my wholesale business is more geared to cookies and brownies I do love making cakes - just finished a banana cake with peanut butter filling for an Elvis celebration tomorrow.

I'd be happy to help your friend, Jenny - give me a call or check out our Facebook page for pictures of some recent work.

We are so lucky to have so many talented cake makers in our area-- Several have already been mentioned that I really enjoy. One more -- Mary Caramel at The Sugarwoods -- 222-9671
An incredibly talented woman, you won't be disappointed. We have never had people rave as much as when we have used her cakes & desserts.
Good Luck!
