Fruit Cakes!

Why do Fruit Cakes always get such a bad rap? I realize some of them aren't very good but some of them are truly delicious! It just seems like everyone is always down on them saying they are terrible which in many cases is not the case!

Our Swedish recipe involves lots of spices: cloves, ginger, and cinnamon but no rum, etc. So, the batter is dark. I will have to check the recipe but, I don't recall any molasses to make it dark. Do the lighter versions (the pictures I see posted) have any spices involved?

The Fruit Cake I grew up with was a dark molasses based nut and spice cake that had to be kept in rum soaked rags in the basement for at least a month before Christmas. The best cake ever. None of that candy ass stuff in it. Just dark wet heaven on the tongue. I've got the recipe hidden somewhere, but with out partaking of the spirits any more I pass on making it. Might just do a quick version if I can find the recipe.

Love love love good fruitcake! The best I've had, other than my mother's (which sounds similar to Suzanne's except Mom wrapped her cakes in bourbon soaked cheesecloth) is made locally and can be found at Paul's Fruit Markets. It's called BETTY'S FRUIT CAKE and is made by the same woman that volunteers her cleaning services for the priests at St. Joe's Church, in Butchertown. I bring them home and wrap them in Wathen's soaked cheesecloth or sometimes Barbancourt rum soaked clothes. OMG!

I love, love, love them too. Your idea for wrapping Betty's FC in bourbon cloth is brilliant! I have not had one for years cause I want them liquor soaked, intend to make them and then I always seem to wait too long...I may be making a special trip to Paul's this week. :D

We were given a recipe ( that I cant find right now) by a lady we know, who lives on a small Caribbean Island, for what is known as Black Cake. Like some of the others mentioned here it is also liquor soaked. Aside from not having the "traditional" fruit cake fruit,one main difference is that its soaked in rum for a long time. She told us they start in early November and pour a splash of rum over the cake everyday until Christmas.One other nice tradition they had on the island was for everyone to come together and go caroling(although they had a different name for that) around the(very small) island Christmas eve. Most everybody on the island would put a table of liquor and black cake in front of their house for folks to enjoy. Apparently by the time you made the circle around, you were fairly well snookered.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

The fruitcake from Collin Street Bakery in Corsicana, TX is really famous and has been featured on Food Network. They've been making it for over 100 years. I know they ship their fruitcakes worldwide because my family used to send them to our relatives. They come in this cute red tin.
