Jamón Ibérico

by JustinHammond » Mon Sep 20, 2010 10:29 am

Is there any place selling or serving Jamón Ibérico (of any kind) in the area?

The hams are labeled according to the pigs' diet, with an acorn diet being most desirable:

The finest jamón ibérico is called jamón ibérico de bellota (acorn). This ham is from free-range pigs that roam oak forests (called la dehesa) along the border between Spain and Portugal, and eat only acorns during this last period. It is also known as Jamón Iberico de Montanera. The exercise and the diet has a significant impact on the flavor of the meat; the ham is cured for 36 months.

The next grade of jamón ibérico is called jamón ibérico de recebo. This ham is from pigs that are pastured and fed a combination of acorns and grain.

The third type of jamón ibérico is called jamón ibérico de cebo, or simply, jamón ibérico. This ham is from pigs that are fed only grain. The ham is cured for 24 months.

I think I saw some Spanish ham at Creation Gardens. That would be my first stop.

At restaurants, Proof would probably be your best bet. Their charcuterie changes frequently, but you might call and see if it ever makes the rotation.

Or perhaps De La Torre's/La Bodega?

I think Mojito's serves Iberian ham as well.

Mojito's has 18 month reserve Serrano ham, and Iberico cheese, but no Jamon Iberico.

It is very expensive even in Spain- the equivilant of $100-120 a lb. ( but a 1/4 lb goes a long way flavor-wise).

None of them have Iberico listed on their menu.

I could be wrong, but the only place I've seen this even remotely close to Louisville is at Jungle Jim's.

I wonder if Madrid's Museo del Jamon would be into franchising a Louisville location...

Justin
Im sure you have seen them for sale on-line. I would be really surprized if anybody has what you are looking for. I would really like to try it myself. One site is offering a 15# ham for $1395.00. We're talkin $96 lb. I think what they have at Lotsa Pasta is Serrano at about $30 lb.

I'd look online. I just checked online prices here in Germany. Whole leg you can get nut-fed pata negra for as little as $40 per lb. I don't think prices have recovered since last year. No need to pay up while the Spanish economy is still in the dumps.

Obviously a really good quality Serrano starts looking cheap in comparison too.

Justin, I know you were looking for someone in the area who stocks it, I dont think you will find anybody, but this place http://www.tienda.com/food/products/jm-23.html is one of the only places that I have found that will sell you less than a full leg. They have 1/4 pounds that go from around 25 up to 50 dollars.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.
