Gonna fry up some empanadas stuffed with the left over chicken moambe that we made last night. Its only 3:30 and the thought of them are making me really hungry!

I'm going to do something with a thick local pork chop from Dreamcatcher Farm.

Did you mean to put this in the Main Forum, Madi, or The Louisville Kitchen? Maybe we can move it over to the kitchen after it's had time to simmer and come to a boil. :)

Robin, I figured there is more traffic here...and I'm open to ideas for the kitchen or going out. While I have a pretty well stocked kitchen, I'm all for someone else handling the job!

Yummm...Seviche, but have finally talked the super picky hubby into doing Indian at Shalimar on Sunday and I don't want to push my luck too much in one weekend!

We are serving up some lightly smoked trout, pan finished. Served with Remoulade.
Also, serving Black and Blue Bison- blackened bison rib eye with melted blue cheese crumbles

Pan fried, in butter and olive oil, chicken tenderloins, lightly seasoned. White rice and sweet plantains. Sliced tomatoes with fresh lime juice.

We ended up going to BJ's Brewery. Had never been there and heard they make their own rootbeer so gave it a shot. Pretty good and very affordable. Does mean that I have to cook tomorrow though...but been wanting to try some roasted garlic mashed potatoes with fried rosemary and caramelized onions. Hitting the farmer's market in the morning to find some good stuff to go with the potatoes...kinda backwards on the planning!

My mother-in-law is visiting & she made a mean Croque-monsieur w/ a light salad a few nights ago but we've been on the run most of the time so we've been eating out a lot. 2 nights ago we had dinner at Le Relais for my wife's birthday (an annual tradition), last night we made homemade spaghetti (noodles & sauce from scratch), tonight we're going to a cookout at my parents home in Lebanon Junction & tomorrow we're having lunch at the Vietnam Kitchen (not sure what we're doing for dinner yet).

Last night was Papa John's at the pool. ( Yes, not my favorite, but very convenient).

Tonite is Lemon-oregano wild salmon with oro with spinach/tomato/feta at home.

Sunday night is pork BBQ- South Carolina -style. I'll make it in our smoker which I'm hoping to figure out quickly- Brian is in TN and he's always been the smoker in our family. Wish me luck, Steve!

<sigh> Unfortunately the smokers and the (charcoal) grill are all cleaned up and packed for next weeks contest...which sucks because I have got a serious Jones to burn some meat.

Speaking of meat...Tomorrow is week one of P-mans steak challenge. I bought two steaks to grill: one from Butchers Best and one from Kroger. The winner of this round will go up against Fresh Market. The winner of THAT round will go up against Whole Paycheck...etc, etc. I may even throw in a round against that "locavore" stuff. Bottom line, I WILL find out who sells the best steaks in town.
