I used to be the same way but have had some incredible sushi on Sundays. If they got a delivery on Friday or Saturday, it should still be "fresh". In Japan, even a freshly killed and butchered fish will be left in the refrigerator to mature for a few days to develop umami flavor. However, it is killed in a method that delays the onset of rigor mortis, ikejime.
Still, I would recommend that you go to a place that you trust because this ain't Japan.
