(PS: We already know that we're getting two corporate-chain Brazilian steak houses in Fourth Street Plastic, so let's wish for something more creative, K? )

I wish someone would either open a place specializing in or add to their menu, Nashville Style Hot Chicken. If I had deep pockets, I would open a chicken joint in the old laundromat across from Cave Hill on Cherokee Rd. and Baxter that is vacant and has off street parking in the back. Or the Old Mid City Mall City Cafe spot. Either of these would be a great, slightly off the beaten path location for a concept like this!

Holy Grale has it on occasion. They also did a slider version during the summer with a watermelon slice.

After spending a week in San Juan/Vieques earlier this year...Puerto Rican cuisine bolted to near the top of my favorites.

Just amazing.

I'd seen plenty of 'food shows' featuring Mofongo in all it's forms....and it didn't excite me much. Boy was I wrong. Don't think I went a day without eating it in some form. Pork, Steak, Seafood, etc...all incredible, as was everything else we ate on that trip. I don't think we had one meal that wasn't spectacular....from street food, to local bakery sandwiches, to fine dining.

After spending a week in San Juan/Vieques earlier this year...Puerto Rican cuisine bolted to near the top of my favorites.

When I lived and worked in NYC during the '90s, my office was on the edge of the Garment District, and there little Puerto Rican holes-in-the-wall (and little Korean holes-in-the-wall, too) just about everywhere. I may have been the only Anglo in our office, although certainly not the only one in the neighborhood, to learn more about PR food than I ever thought I would know!

It's actually gretting some tread as a national food trend. With the renewed nationwide interest in Southern Cooking a few years back, this is one of the items that consistanly seem to appear ion "Southern" places menus, in not so Southern locales.

I wouldn't do full service as they don't at Prince's or Hattie B's. It's order at the counter and they give you a number thing and bring it out when its done. Similar to what they do at Feast BBQ. It does take some time as they fry to order, but I'm of the opinion that if you only do one thing and do it well people will come. My go to place in Nashvegas for this dish is Hattie B's. Outside of about 8 very complementary and very well made sides, thats the only thing they serve and the line is ALWAYS out the door at any time I've visited.

If you ever see this dish on the menu at Seviche, I highly recommend! I had never had it before either but Chef Anthony's version has probably ruined any other one I might become privy too.

When would/did he have it on the menu...? One of his special "region" or wine nights?

I've never known Seviche's menu to change all that much.

I'd like to see a good cheap falafel joint, similar to the ones you find in NYC, SF, Berlin, etc. If you've had the good ones, you know what I'm talking about.

I'd like to have a few "local" restaurants settle down in J-town/Fern Creek. We were so very fortunate to have Mussels set up shop and I'd REALLY enjoy these type quality restaurants on this side of Louisville.

In terms of particular styles, I'm not certain.

I wouldn't be mad at a legit Halal Cart, either.

There are lots of great gyros in town, and many different styles....pretty sure I've had them all...

...none, however, make me as happy as an NYC Street cart (53rd & 6th Halal Guys being my favorite), with the combination of white AND Red sauce. Something magical going on there, and I've yet to find a place here that offeres that.

How about a true New York Bagel bakery! Those of us who are fortunate enough to really know what they are know that the delicatessens that also sell bagels that we presently have aren't that close to the real thing.
