Duck Breasts-Retail?

Any suggestions where to buy duck breast fillets in the area? I'm not looking necessarily for organic/free range/pastured/fresh although that would be a plus.

Bill, Burger's Market usually has frozen boneless duck breasts, if that's close enough to do the deal.

We usually have duck breast in stock at The Fresh Market on Shelbyville Rd at Moser Rd.

I've bought them both at Whole Foods and Fresh Market. Believe Kinsley may also have frozen.

I forgot about Fresh Market, I had to boycott them a few years ago...due to an incident in their deli. Gag.

How do you cook the duck breasts? I love duck, but have never made it!

Michelle, I usually do a simple process: Take the duck breast (thawed, natch) and slice through the skin down into the fat in a checkerboard pattern of 1-inch squares.

Preheat the oven to 400.

Then get a black iron skillet sizzling hot and pop in the breast, skin side down. Let it spatter and sizzle (you may want to take down the smoke detector 8) ) and pretty soon the skin will start to crisp up, and a lot of fat will render out.

Hit it with a little S&P while it's cooking, and if you want to add a little Asian flair, brush it with some soy sauce and dust it with Five Spice, and toss a couple of slices of fresh ginger and a couple of smashed garlic cloves in to cook in the fat.

After about five minutes, discard the garlic and ginger and pour off most of the fat. Flip the breast so it's skin-side up and pop the skillet into the preheated oven for another 5 to 7 minutes. Knock the oven time back a couple of minutes if you like the breast slightly rare, which really is the best way, but if you can't take that, then let it stay in a little longer. If you want to play it safe, an instant-read thermometer ought to read from about 140 in the center for rare to 160 for well-done.

One good-size breast portion should serve two, although a big eater could probably put away a whole one.

They are easy.
I generally do mine on the Weber grill. Checkerboard the fat as Robin suggested and grill until medium rare. if I'm really ambitious, I'll prepare a blackberry reduction sauce although I have not done that prep in years.

The Kroger on Bardstown Rd in the Highlands had Duck Breast Filets today. They were in one of the free standing coolers in the center of the meat section, right beside some rabbit. It's the same cooler that usually has all the ribs on the end and turkey on the other side. I believe they were $4.99 or $5.99 a pack on sale.

Restaurant Depot. Individually or by the case. Also whole ducks, duck leg quarters, and half duck. All are from Maple Leaf Farms.

Other fun stuff: Whole Halal goat and lamb, cubed goat meat, whole rabbit, cornish hens, beef tongue (Angus), smoked pigs tails.

Bret... do you guys by chance sell Beef Heart? and how can I get my hands on some? I need very lean meats for my dogs that I have to homecook for.

Madeline, just a thought. If you can't locate a local source, you may want to discuss your needs with one of the cattlemen at a local farmers market. If they can't provide the hearts, I'm sure they know a source.
